I joined the board of the Industrial Council of Nearwest Chicago (ICNC) because my Dad made things with his hands. I think modern manufacturing is so important for the future of our society. There is great honor in learning and perfecting your craft.
The Hatchery is a joint venture between Allies for Community Business and ICNC. Spending so much of my career in the food industry I have noticed one of the biggest barriers to entry is the need for a commercial kitchen. These spaces and equipment are SO expensive. The Hatchery provides state of the art kitchen facilities at a fraction of the cost.

I’m really proud to be a part of this organization and it inspires me to seek out aspiring entrepreneurs and support them. At Luby’s we are aspiring to develop entreprenuerial opportunities and are working with local makers to develop products and services for us. It can be challenging at times, but the reward is worth it….and…selflishly…I think it is something my Dad would appreciate.
